We Wanted to Build the Restaurant We Couldn’t Find in Evansville.

We wanted friendly service, from people who would remember your name and what you like to drink. The sort of restaurant where everyone jumps in and helps each other, warmly welcoming you. The kind of place where folks have a great time, with the sounds of laughter and conversation in the background.

We wanted a clean, modern environment, not loaded with dust-collecting ‘memorabilia.’ Jazz and standards playing softly in the background. And we wanted to be able to eat how we wanted, sometimes a burger for dinner and other times a steak for lunch.

We wanted wholesome food, made from scratch, not poured out of a microwaved pouch. No trans fats, no MSG, no gums, no gimmicks: food that respects tradition, yet also embraces modern ideas of how food should look and taste.

So we drove South, looking for inspiration. We measured the thickness of fried green tomatoes in Social Circle, Georgia. We dissected Hoppin’ Johns in Savannah, Cornbread Salad in Franklin, Tennessee and Fried Chicken in Charleston. We dined in restaurants both humble and grand. We enjoyed the hospitality of friends along the Low Country coast; lazy summer dinners on screened porches. We took a lot of notes. And we remembered our favorites from New Orleans. We gathered up all of these notes, and our memories and put it all together for you.
